Happy Birthday to Shane!
Today Shane turned 34. He is SO old! 3 whole weeks older than me. :) I was so happy to get to decorate with all the party flags that didn't sell at the festival. I decorated while he was asleep just like we do with the kids. The kids gave him a Seahawks shirt and Seahawks hat. He was like an excited child and put them on immediately.
For dinner I cooked him fettuccine alfredo with prawns, baby shrimp and scallops. It was the best I have ever made. See recipe below.
Happy Birthday daddy!
Saute large prawns, small scallops and small shrimp together with
1 large clove garlic, some butter, and 1 cup white wine.
For each person you will want at least 3 prawns, 8 small shrimp and 5 or so small scallops
As soon as seafood is cooked through, remove it, leaving the broth and place on separate dish.
Reserve the broth and place in separate cup. ( I do this because I only have one saute pan)
Make a rue using butter and flour. When bubbling, add reserved broth and enough half and half
to make a nice Béchamel sauce. When it is starting to get thick, remove from heat and add 2 cups fresh parmesan cheese, and 3 more cloves of FRESHly minced garlic. Heat again, on low
until small bubbles form. Salt to taste and add freshly ground pepper. If you like more cheese, add more, if you need more wine, add more, just remember to allow the alcohol to cook out.
To serve:
Place cooked fettuccini (I use fresh noodles) on a plate .
Ladle the sauce over the pasta
Place, small shrimp, scallops, and large prawns on top
Sprinkle with more parmesan cheese
Serve with garlic bread on the side to mop up the excess sauce.
Bon appetit!
